Favourite Vegetable:
I have lots. It very much depends on the season. In late winter I use fennel and blood oranges, in spring it is asparagus and new potatoes, in summer it is fresh tomatoes and broad beans and in autumn it is squashes and mushrooms. I try to eat with the seasons. It is a lovely way of keeping time.

What was the first dish you ever cooked? How old were you?
The first thing I remember making was an apple tart in my Nanny's house. I must have been four or five years old.

What would your last meal on earth be?
It would have to be pasta with fresh tomato, and basil sauce. I have really fond memories as a kid, eating bowls of this with mountains of parmesan on top.

What is your most trusty kitchen tool?
A spatula!

What is your favourite Irish food?
So many to speak of but as I’m a Waterford woman it has to be the blaa. For those uninitiated the blaa is a soft floury bap made within the Waterford county borders.

What is comfort food for you?
Shared food is comfort food for me. There is nothing like having a delicious meal with friends and family.

Who inspired you to become a chef?
There are many people who have inspired me. My two grandmothers are incredibly talented in the kitchen. I still ring them to this day about recipes. My Dad is a chef as well. I used to work in his kitchen when I was a teenager. I always loved the hustle and bustle of a busy kitchen. I've also worked with so many great chefs who have inspired me throughout the years.
