Ingredients
  • 1 onion, finely chop
  • 4 cloves, finely chop
  • 1 thumb grated ginger
  • 1 red chilli
  • 3 cardamom pods
  • ½ tsp cinnamon
  • 1tsp coriander
  • 1 tsp cumin
  • 2 tsp turmeric
  • 300g red lentils
  • 1 tin tomatoes
  • 1 tin coconut milk
  • Handful coriander
Method
  • Heat the saucepan with a good glug of oil over a medium heat and add onions, ginger and garlic, cook for 10 mins..
  • Add all the spices and cook for 1 minute, stirring constantly.
  • Now that the spices are cooked you can put in the lentils, tomatoes and coconut milk. Stir occasionally so that the lentils don't stick to the bottom of the pot. Simmer on a low heat until the lentils are cooked (20 minutes) but still retain little bite. Add more water if the consistency is too thick.
  • Garnish with a handful of chopped coriander
